ABOUT Beetroot coconut burfi RECIPE

Beetroot is low in calories and almost fat free. It is rich in antioxidants, it prevents cancer and heart diseases

Ingredients Serving: 5

  1. Beetroot- 1 cup grated
  2. Coconut - 1 cup grated
  3. Sugar - 1.5 cup
  4. Ghee - 1/4 cup
  5. Cashews - 2 tblspn
  6. Cardamom Powder - 1 tsp
  7. (Use finely grated beetroots and coconut..)

Instructions

  1. Heat ghee in a pan, add in nuts and fry till golden. Add in beetroot and coconut and mix well. Stir fry this for 5 mins till raw smell leaves from the beets.
  2. Now add in sugar and keep mixing, the sugar will melt and the mix will get thick. Keep mixing.
  3. Once the mix starts to leave the sides, add in cardamom powder and mix well.
  4. Spoon this in a greased tray and spread evenly. Let it set, cut it into squares. Remove it and serve.
