ABOUT Healthy tacos ( oil free) RECIPE

It’s no secret that oil is not a health food. Yet the struggle to go totally oil-free when transitioning to a healthy, whole-food plant-based diet is real. Here i have made completely oil free wheat flour tacos with red spinach and potatoes. Red spinach is known to have a range of health benefits and is known to be good for digestion, anemia and improving kidney function and overall immunity.

Ingredients Serving: 4

  1. Phulka ( chapathi) - 4
  2. Red spinach - 300 grams
  3. Potato - 1/2 cut into small dice
  4. Green Peas - 1/4 cup
  5. Grated Coconut - 1/4 cup
  6. Garlic - 3 cloves
  7. onion - 1/2
  8. Red chilly powder- 1 teaspoon
  9. Salt to taste

Instructions

  1. Remove the root of the red spinach along with the thicker part of the stem. Wash the spinach thoroughly under running tap water for 3-4 times or until free of dirt.
  2. Chop the leaves finely.
  3. Mix chopped leaves chopped onion grated coconut chilly powder salt in a bowl
  4. Heat a pan. Add chopped garlic and fry until it become golden brown. stir occasionally and add water 1 to 2 tablespoons at a time as needed to keep the garlic from sticking,
  5. Then add the above mixture. Close the lid and cook for 10 minutes
  6. Meanwhile let us boil potatoes by adding little salt in a medium saucepan and, then reduce the heat to medium-low and simmer, covered, until the potatoes are tender when pierced with the tip of a sharp knife, 10 to 12 minutes. Drain well and put it in the mixture and mix well
  7. Put fresh green peas in a boiling water and cook for 2 - 3 minutes.
  8. Garnish the filling with green peas
  9. For tacos- Preheat oven to 250°F (120°C)
  10. Poke holes in the phulkas using a fork
  11. Place the phulkas over the oven racks as shown in the picture for 5 - 7 minutes
  12. Take the phulkas out and let them cool.Fill each taco and serve
