ABOUT Veg Yakhni pulao RECIPE

Easy and quick recipe with step by step photos. One of my favorite dishes. Vegetable yakhni pulao is a comfort one pot meal when we dont have time to do elaborate cooking or you have to cook food on a short notice or in a quick time. When i have a time i cook this veg pulao in a pot and when no time, i use the pressure cooker.

Ingredients Serving: 3

  1. Rice 1 1/2 cup
  2. Oil 3 to 4 tbsp
  3. Onion sliced 1 medium size
  4. Cumin seed 1 tsp
  5. Black paper 6 to 7
  6. Cinnamon 1 small piece
  7. Clove 1
  8. Bay leaves 1 to 2
  9. Ginger garlic paste 2 tsp
  10. Red chilly powder 2 to 3 tsp
  11. Coriender powder 1 tsp
  12. Turmeric powder 1/2 tsp
  13. Salt to taste
  14. Tomatoes 3 small size
  15. Curd 1 tbsp
  16. Coriender 1/2 cup
  17. Green chillies slit 2
  18. Potato diced 1 large size
  19. Carrot diced 1 cup
  20. Green piece 1/2 cup
  21. Brinjal (baigan) diced 1 small size

Instructions

  1. Heat oil in a pot on medim flame. Add sliced onion, saute for a few seconds.
  2. Now add all the whole garam masala. Saute till the onion turns little golden in color.
  3. Now make a paste of ginger garlic paste, red chilly powder, coriender powder and turmeric powder adding little water.
  4. Now add this mixture in pot, add salt and diced tomatoes. Saute for a minute.
  5. Now add curd and again cook for 5 minutes on a medium flame.
  6. Add all the veggies.
  7. Cook it for a minute.
  8. Now add coriender and slit green chilles.
  9. Cook for another few seconds.
  10. Add 2 glass of water.
  11. Now add washed rice. Stir the rice well.
  12. Cook it on a high flame till water gets little burn.
  13. Now cover with a tight lid and put it on dum for 15 to 20 minutes on a low flame.
  14. Later open the lid. if the rice appears not be completely cooked and the mixture looks dry, just add some more water to the rice. gently stir with a fork. cover tightly and cook yakhni pulao for a few minutes more.
  15. Yeah it's done..
  16. Its ready to surve.
