ABOUT Panjiri RECIPE

Panjiri is a nutritional supplement.It is made from whole wheat flour with rich nuts and made up of pure desi ghee.It is usually eaten in the winters to ward off cold. panjiri is a good source of energy given to the pregnant women and nursing mothers .

Ingredients Serving: 5

  1. Whole wheat flour - 2 cups
  2. Semolina - 1/2 cup
  3. Powdered Sugar - 1 1/2 cup(increase or decrease the quantity according to your taste buds)
  4. Jaggery powder - 50grams(optional)
  5. Green ilaichi powder - 1/2 tsp
  6. Black Pepper powder - 1 tsp
  7. Desi ghee - 100 grams(you can add more also)
  8. Almonds chopped - 20 to 25 pieces
  9. Raisins - 15 to 20 pieces
  10. Gond katira - 15 to 20 small pieces

Instructions

  1. Take a wok add 2 tbsp ghee in it and fry edible gum ,when the gum starts popping up,take it out.
  2. Then add almonds and raisins,fry them for 1 to 2 minutes not more than that otherwise it can give a burnt taste.
  3. keep aside all the fried ingredients.
  4. Now in the same wok add more 2 tbsp ghee and add semolina and wheat flour together,roast it well.
  5. Add ilaichi powder and jaggery powder and mix it well.
  6. After 10 minutes when you find that the flour has started changing its color,then add sugar in it.
  7. Now roast-roast till you will find the flour has turned light brown in color.
  8. When your flour is properly roasted add the fried dry fruits including edible gum in the flour.
  9. Now add black pepper powder and again mix it off.
  10. Mix it very well(do not forget to check the sugar taste)
  11. You can add more powdered sugar if needed.
  12. You can turn off the flame if it is done.
  13. Last step is very important.
  14. Take a small wok add all the around 70 to 75 grams ghee and melt it properly.
  15. Add the melted ghee in the ready panjiri.Your power pack Panjiri is ready to enjoy.
