ABOUT Ful Medames /Foul Mudammas (Middle Eastern Mashed Fava Beans Breakfast Dish) RECIPE

Ful Medames is a traditional Egyptian Breakfast dish. Though this dish originated in Egypt, it has widely spread and become a popular dish across Middle eastern region. The recipe gets tweaked as you travel from one country to another in this region but the main ingredient remains same which is cooked fava beans. Served with warm pita bread, this simple and healthy breakfast will fill you up for long time.

Ingredients Serving: 4

  1. Fava Beans canned, 1 can
  2. water 1/4 cup
  3. Medium sized tomato 1, finely chopped
  4. Small sized onion 1, finely chopped
  5. Garlic, peeled and grated 1 tablespoon
  6. Coriander leaves, finely chopped 2 tablespoon
  7. lemon juice 1 tablespoon
  8. Olive oil 2 tablespoon
  9. Cumin powder 1 teaspoon
  10. Black pepper powder 1 teaspoon
  11. Salt to taste
  12. Parsley, finely chopped 1 tablespoon for garnish
  13. Other ingredients for toppings [as per availability] listed below
  14. Olive oil 1 tablespoon
  15. Cucumber, finely chopped or sliced
  16. Finely chopped tomato, 1 tablesppon
  17. Finely chopped onion, 1 tablespoon
  18. Finely chopped Scallions, 1 tablespoon
  19. red chilli flakes 1 teaspoon
  20. Tahini sauce

Instructions

  1. Drain, rinse the canned beans with water and keep it aside.
  2. Heat olive oil in a pan.
  3. Add grated garlic and saute it for few seconds.
  4. Add finely chopped onion and saute it.
  5. Now add to the pan finely chopped tomatoes, finely chopped coriander leaves, drained beans, 1/4 cup of water, cumin powder and continue cooking until the mixture comes to a boil.
  6. Add salt to taste, lower the flame and let the mixture simmer for 25 minutes.
  7. Add black pepper powder to taste.
  8. Mash the mixture with back of spoon or potato masher to the consistency that you prefer.
  9. Switch off the flame.
  10. Squeeze in some lemon juice and mix everything well.
  11. Place the mixture on serving plate/bowl and drizzle olive oil on top.
  12. Garnish it with toppings of your choice or according to ingredients availability.as mentioned in the ingredients list
  13. Serve it warm with pita bread and enjoy this traditional Egyptian breakfast in the comfort of your home!
