Ingredients Serving: 5

  1. Rice flour-4 cups
  2. Jaggery-5tblspn
  3. Grated coconut-8 tablespoon
  4. Sugar- for ttaste
  5. Salt

Instructions

  1. Sift the rice flour in a big bowl. Add 10 cups of water in the bottom of a steamer or idly cooker. and place a wet cloth over the rack. Place the 8 inch cake ring or any round bowl in the center of the rack.
  2. For yellow layer: Place 1 cup of rice flour in a medium sized bowl. Add 1/4 spn turmeric powder or saffron strands a pinch of salt, 2 tbs of white sugar or jaggery, 2tblspn grated coconut and 4 ts of water.
  3. Mix it all up and press out any wet lumps by rubbing the lumps gently between your palms.
  4. Put the mixture into a sifter and sift into the center of the ring.
  5. Flatten out the mixture so it sits level in the ring.
  6. For orange layer:
  7. Place 1 cup of rice flour in a medium sized bowl. Add grated carrot , a pinch of salt, 2 tbs of white sugar or jaggery 2tblspn grated coconut and 4 ts of water.
  8. Mix it all up and press out any wet lumps by rubbing the lumps gently between your palms.
  9. Put the mixture into a sifter and sift into the center of the ring.
  10. Flatten out the mixture so it sits level in the ring.
  11. For pink layer:
  12. Place 1½ cup of rice flour in a medium sized bowl. Add a pinch of salt and 2 tbs sugar. Put 2 tbs water 2tblspn grated coconut 1 tbsp of beetroot juice into a small bowl and mix well.
  13. Add the pink water to the rice cake mixture and mix it all up. Press out any wet lumps by rubbing the lumps gently between your palms. Put the mixture into a sifter and sift into the center of the ring.
  14. Flatten out the mixture so it sits level in the ring.
  15. White layer (the top layer):
  16. Place 1 cup of rice flour in a medium sized bowl. Add a pinch of salt, 2tblspn grated coconut 2 tbs white sugar, and 4 ts water. Mix it up and press out any wet lumps by rubbing the lumps gently between your palms.
  17. Put the mixture into a sifter and sift into the center of the ring. Flatten out the mixture so it sits level in the ring.
  18. Close the lid of the steamer and bring to a boil for 30 minutes over high heat.
  19. Turn down the heat and simmer another 5 minutes. Take out the rice cake and let it cool down. Serve with tea or coffee.
