Ingredients Serving: 6

  1. • Whole Wheat Flour / Atta – 1 ¼ cup
  2. • Grated Carrots – 1 cup
  3. • Green Chilli Paste – ¼ tsp
  4. • Asafetida / Hing – 1 Pinch
  5. • Red Chilli Powder / Lal mirchi powder – ¼ tsp
  6. • Salt – ½ + ¼ tsp
  7. • Oil – 3 tsp
  8. • Yogurt / Curd / Dahi – 1 ½ tsp
  9. • Mustard Seeds / Rai – ¼ tsp
  10. • Cumin Seeds / Jeera – ¼ tsp
  11. • Turmeric Powder / Haldi – ¼ tsp
  12. • Coriander powder / Dhaniya powder – ¼ tsp
  13. • Oil for roasting as required
  14. • Butter for garnishing as required

Instructions

  1. • In mixing bowl, add 1 ¼ cup of Whole Wheat flour (Atta), ½ tsp of Salt, 1 tsp of Oil and 1 ½ tsp of Yogurt (Dahi). • Mix it well and add Water as required to knead the soft dough. • Cover the dough and allow it to rest for 20 min.
  2. • In a preheated pan, add 2 tsp of Oil then add ¼ tsp of Mustard seeds (Rai), ¼ tsp of Cumin Seeds (Jeera), 1 pinch of Asafetida (Hing), ¼ tsp of Green Chilli Paste and 1 cup of grated Carrots then sauté the Carrots nicely.
  3. • Add ¼ tsp of Turmeric Powder (Haldi) followed by ¼ tsp of Red Chilli Powder (Lal Mirchi), ¼ tsp of Coriander Powder (Dhaniya) and ¼ tsp of Salt to the Carrots. • Sauté for more 3 – 5 Min and then stuffing is ready to use.
  4. • Knead the dough again for more 2 Min by dusting flour over it & take small portion of the dough and start to roll into oval shape (for square Paratha).
  5. • Add stuffing approximately 1 ½ tsp and fold from all four sides and start rolling into square Paratha. • Put Paratha on preheated tawa and roast it with 1 tsp of Oil from both sides.
  6. • If required with the help of masher slightly press Paratha and roast from both the sides. • In a similar way, make all the Parathas. • Garnish with butter and serve hot with Yogurt (Dahi).
