ABOUT Vada.Sambher RECIPE

This is a typical south Indian breakfast, my family loves it so do I.

Ingredients Serving: 4

  1. For Vadas: 2 cup white urad dal
  2. Salt
  3. 1/4 tsp cumin seeds
  4. 1/4 tsp whole black pepper
  5. Oil for frying
  6. For Sambhar :
  7. 2 cup tuar dal
  8. 2 cup mixed veggies [carrots, drumsticks, lady fingers]
  9. Salt
  10. 1/4 tsp Turmeric powder
  11. 1/4 tsp mustard seeds
  12. 1/4t sp red chilli powder
  13. 1/2 tsp sambhar powder
  14. 4 tsp tamarind pulp
  15. 10 curry leaves
  16. Oil for frying

Instructions

  1. For the vadasm soak the urad dal for 4-5 hours, in water.
  2. Strain the dal and grind into a smooth paste.
  3. Add salt, cumin seeds and black pepper.
  4. Whisk using hands so that it is little aerated.
  5. Heat ample amount of oil in a kadhai.
  6. Make vadas out of the batter and drop them into hot oil, fry them on a medium to low flame, until golden brown.
  7. For the sambhar :
  8. Soak the tuar dal for 3-4 hours, in water.
  9. Add all the dal and the vegetables in a pressure cooker with required amount of water.
  10. Add salt and turmeric powder. Close the lid, and cook until 3 whistles are attained.
  11. let the pressure settle down and open the lid to check.
  12. Heat oil in a pan
  13. Put mustard seeds and dry red chillies.
  14. Add curry leaves, followed by red chilly powder and sambhar powder.
  15. Once it smells, pour this tadka into teh sambhar.
  16. Add the tamarind pulp into the dal, simmer.
  17. Check for seasoning and serve with the vadas.
