Kulchas are very famous punjabi bread which goes well with spicy veg or non vegetarian curry on the side, generally they are cooked in a tandoor but here I have made them using a pressure cooker.

Ingredients Serving: 4

  1. 5 cup maida
  2. 5 boiled potatoes
  3. 2 chopped onion
  4. 2 green chillies
  5. Coriander leaves [handful]
  6. Salt
  7. 1 tsp sugar
  8. 1/2 tsp baking powder
  9. 2 cup curd
  10. 1/2 tsp cumin seeds
  11. 1/4 tsp coriander seeds
  12. 1/4 tsp amchoor [dry mango powder]
  13. Butter

Instructions

  1. Mix the maida with curd, sugar, salt, and baking powder.
  2. Knead it with very little water or as required, rest them for 2 hours.
  3. Now knead it again by applying little oil on the surface and leave it for 10 minutes.
  4. Now for the filling, mash the boiled potatoes, add salt and all the masalas.
  5. Mix well and add chopped onion and green chillies.
  6. Add coriander leaves
  7. Mix everything well.
  8. Now heat a pressure cooker pan.
  9. Divide the dough into equal sized balls, take each dough ball and flatten it.
  10. Now put some stuffing into it and reshape the, Roll it again to flatten it.
  11. Now put the flattened and stuffed raw kulcha into the cooker pan, apply some water on top of the kulcha and cover with lid, Cook on one side and flip to the other, Cook well and roast until browned.
  12. Now remove it and smear a dollop on butter on top, and serve hot.
