ABOUT Rayalaseema Uggani or burugula upma RECIPE

Uggani is a upma variety made using puffed rice. Often served as breakfast in northern karnataka and the Rayalaseema region of Andhra pradesh can be had as evening tea time snack as well. Vendors serve uggani usually with mirchi bajji but tastes good as it is too.Easy to make yummy in taste !

Ingredients Serving: 3

  1. 200 gm : puffed rice
  2. 1 tbsp : oil
  3. 1 tsp : mustard seeds
  4. 1 tsp : Cumin seeds
  5. Few curry leaves
  6. 1 tbsp : split Urad dal
  7. 2 tbsp : raw Peanuts
  8. 1/4 tsp : turmeric
  9. 3 : Green chillies slit
  10. 1 tsp : chopped Ginger
  11. 1/2 cup : Sliced onion
  12. 1 medium : sliced tomato
  13. Salt to taste
  14. 3 tbsp : roasted chana dal powder
  15. 2 tsp : lime juice

Instructions

  1. Wash the puffed rice with enough water and squeeze out any excess water from it. Set aside ready until use.
  2. Grind two table spoons of roasted chana dal into fine powder and set ready.
  3. Heat a pan with oil. Once hot add raw peanuts , urad dal and fry until golden.
  4. Later add the Mustard, cumin seeds, ginger pieces, slit green chillies and curry leaves. Saute for a minute.
  5. Next add the turmeric , Sliced onion and fry until it is slightly caramalised. Now stir the sliced tomato and cook until soft.
  6. Add the washed puffed rice along with enough salt and roasted chana dal powder.
  7. Mix everything until well incorporated. Cook on low heat for a minute.
  8. Turn off the heat and add the lime juice.
  9. Serve it hot for breakfast or as a light snack.
  10. Rayalaseema Uggani is ready to devour !
