ABOUT Nutty Caramel Shortbread RECIPE

Buttery shortbread crust layered with thick, rich caramel and topped with cashew nuts. This particular caramel is raw and naturally-sweetened, made with fiber-rich dates(secret ingrediant) instead of sugar, butter and corn syrup. This delicious dessert - perfectly pretty for Christmas and New year parties.

Ingredients Serving: 5

  1. For crust
  2. Granulated Sugar - 1/4 cup
  3. Butter - 1/2 cup
  4. Maida - 1 and 1/4 cup
  5. For Caramel
  6. Dates pitted - 1 cup
  7. salt - 1/4 teaspoon
  8. Lemon juice - 1 teaspoon
  9. Milk - 1/4 cup
  10. Vanilla extract- 1 teaspoon
  11. Coconut oil - 1 tablespoon
  12. Grated Cashew nuts for decorating

Instructions

  1. Soak dates in the filtered water for 2 - 3 hours, untill soft.
  2. Combine all of the ingredients in the blender, and blend until smooth and creamy, adding extra milk, if necessary, to facilitate blending.
  3. Chill it
  4. Meanwhile let us make crust.
  5. In a medium bowl combine the sugar and butter and cream together until smooth. Add flour and mix. Stir in milk. Mixture will resemble crumbs. 
  6. Press into the pre-lined pan and bake 20 minutes.
  7. Remove and allow it to cool
  8. Pour caramel onto cooled shortbread.
  9. Cut into squares and serve it with cashew nuts as toppings
