Bake this festive Alchol free Christmas  fruit cake in advance of Christmas and feed it regularly with my sugarless black tea ..Mix dry fruits,nuts with caramel syrup and orange juice ..I have here soaked my all fruits to caramel syrup and orange juice to make my christmas cake alchol free..

Ingredients Serving: 5

  1. Date - 1/4 cup
  2. Golden Raisin - 1/4 cup
  3. Black Raisin - 1/4 cup
  4. Tutti fruti - 1/4 cup
  5. Cherries- 1/4 cup
  6. Almond- 2 tbsp
  7. Cashew nuts - 2 tbsp
  8. Walnut - 2 tbsp
  9. Caramel syrup- 1 cup
  10. Orange juice - 3/4 cup
  11. Cinnamon powder  - 1/4 tsp
  12. Nutmeg powder-  pinch off
  13. All spice - 1/4 tsp
  14. Refine flour or Maida- 1 1/2 cup
  15. Baking powder  - 1 tsp
  16. Baking soda  - 1/4 tsp
  17. Soft butter - 6 tbsp
  18. Powder sugar - 1 cup
  19. Egg - 2

Instructions

  1. Heat a sauce pan with 1/2 cup sugar .stir continuously till sugar transfer to caramel..now turn down flame and carefully pour 1/2 cup hot water and stir continuously to make caramel syrup..
  2. Boil caramel syrup for 2 minutes. Then add all dry fruits and mix well with caramel syrup..
  3. Let it cool for 2 hrs .then add orange juice and mix well .
  4. Soak dry fruits in caramel syrup and orange juice for 7 -8 hrs or overnight..
  5. Then strain fruits and reserve caramel syrup and orange juice mixture
  6. Coat all nuts with little flour..keep aside.
  7. Now preheat oven on 180c for 12  minutes..
  8. Arrange cake tin with parchment paper or butter paper  and brush little oil or butter..
  9. Now take a bowl add soft butter and powder sugar. Whisk till fluffy
  10. Then add eggs one by one and whisk till creamy
  11. Then add flour , baking powder ,baking soda , spice powder (pass through the sieve )
  12. Now mix wet ingredients with dry ingredients with spatula..
  13. Now add soaked fruits along with reserve caramel syrup and orange juice..
  14. Mix well to make semi thick batter
  15. Now add flour coated chopped nuts and mix well..
  16. Now pour the cake batter into the cake tin..tap twice gently on kitchen table to realease air bubbles..
  17. And bake it for 55 minutes- 1 hr or till a toothpick or knife comes out clean
  18. After 50 minutes (because every oven is different) insert a toothpick or knife into the cake if it comes out clean means its done or if not then bake it for few more minutes..
