ABOUT Eggless Buttermilk Christmas Fruit Cake RECIPE

I love the recipe as it is eggless. Buttermilk automatically makes the cake very moist. Soaking in rum is optional; you can use grape juice or apple juice too.

Ingredients Serving: 6

  1. 1&1/2 cup all purpose flour
  2. 1/2 tsp Salt
  3. 1 tsp baking soda
  4. 1/2 tsp freshly grated nutmeg
  5. 1/4 tsp ground ginger
  6. 1/4 tsp ground cloves
  7. 1 cup buttermilk at room temperature
  8. 100gms melted butter cooled
  9. 1/2 Tsp Vanilla essence
  10. 3/4 cup firmly packed light brown sugar
  11. 2 cups dried or candied fruit(i have soaked in rum for 3 day-optional)

Instructions

  1. For fruits mix I have used chopped dried apricots, dates, almonds, raisins, tutti frutti. Soak all the fruits in 3/4 cup rum or 3/4 cup grape juice for at least 24 hours. This step is optional.
  2. If you chose not to soak dry fruits just proceed right away.
  3. In a bowl whisk the dry ingredients and keep aside.
  4. Now mix the dry fruits in the flour. Be thorough as the dry fruits after soaking tend to stucknto each other.
  5. You can use your hand to sperate dry fruit otherwise they will sink at bottom.
  6. In another bowl whisk buttermilk, melted butter, vanilla extract and sugar.
  7. Stir the buttermilk mixture in the flour spice mix.
  8. Now pour the batter in a loaf pan.
  9. I have divided into two pans- one big and small. You can adjust as per the availability of baking pan.
  10. Bake in a preheated oven at 180 C for 50 ns or until cooked from the middle.
  11. Remove from the tin only after 10 mins.
  12. Serve warm.
  13. Can be refrigerated for a week.
