ABOUT Lilwa Kachori RECIPE

This kachori is one the most famous winter Farsan of Gujarat. Made from Green Toor sabzi.

Ingredients Serving: 4

  1. 2 cups Green toor seeds (peeled)
  2. 2 cups All purpose flour(maida)
  3. 2-3 tsp coriander powder
  4. 2 tsp sugar
  5. 3-4 Green Chilis
  6. 1/4 Cup peeled Garlic (optional)
  7. 1 pinch of hing
  8. 2 tsp sesame seeds
  9. 1 tsp Fennel seeds
  10. Oil to fry.
  11. 2 tsp Raisins (optional)

Instructions

  1. Crush the green toor seeds. Heat 2-3 tsp oil in a wok. Add sesame seefs and splutter till light pink. Add the crushed toor and and saute till the water is evaporated and its colour changes to light green. Add now the spices, sugar, fennel seeds, raisins and salt. Mix well and cook for 5 minutes. Stuffing is ready
  2. Knead a dough from maida and keep aside for half an hour. After half an hour, make balls from it. And roll them to round. Take one rolled layer of dough and stuff 2 tsp of cooked crushed toor masala. Make a round sealed ball from it. Make all the round balls from remaining stuff and dough.
  3. In a wok, heat the oil to fry. Fry the balls deep on a very low flame till golden brown and the outer layer is hard and crispy.
  4. Lilwa Kachori is ready to serve.
