It is a stock based rice with dumping of curry leaf and almonds.
simple but tasty
Wash the rice and leave it to soak for 30 minutes. Rinse till the water runs clear, then drain and keep aside.
In the chicken stock add date syrup, rose water, cardamon and stir until well mixed.
Melt butter in the rice pot, add curry leaf, rice, almond and onion (optional), gently stir for 2-3 minutes.
Add in the sweetened chicken stock and bring to bring to a boil. Add apricot pieces, cover tigthly and simmer on low heat until rice is well cooked. Serve hot.
