Ingredients Serving: 4

  1. Moong dal - 1/2 cup
  2. Rice - 1/2 cup
  3. Carrots - 1
  4. Beans - 4-5
  5. Green peas - 1/4 cup
  6. Tomato - 1 , finely chopped
  7. Spinnach leaves - a handful
  8. Potato - 1 , small sized
  9. Turmeric powder - 1 tsp
  10. Red chilly powder - 1 tsp
  11. Garlic - 2-3 cloves, minced
  12. Green chillies - 2, finely chopped
  13. Ginger - finely chopped, 2 tsp
  14. Asofoetida - a pinch
  15. Salt to taste
  16. Oil - 2 tsp
  17. Ghee - 1 tbsp
  18. Cumin seeds - 1 tsp
  19. Cumin seed powder - 1/s tsp

Instructions

  1. In a pressure cooker, add the washed moong dal, rice, diced veggies, turmeric powder, asofoetida, green chillies and water enough to immerse the other ingredients.
  2. Pressure cook for 3-5 whistles or until mushy.
  3. Once the pressure is released, check for the consistency and adjust with more water. Add salt and mix well.
  4. For the tempering, heat oil and ghee in a pan and add the cumin seeds.
  5. Add the minced garlic, ginger, red chilly powder, cumin powder and remove from heat
  6. Pour this over the khichdi and mix well
  7. Serve hot with papad/pickle/raita/sabzi of your choice.
