ABOUT Baked Cauliflower Samosa RECIPE

Samosa is always a savory snacks loved by all. Baked cauliflower stuffed samosa is a version of healthy snack from normal oil fried samosas. I used whole wheat flour to make this samosas more healthy, if desired flour quantity can halved by maida or all purpose flour. Though whole wheat flour gives a crunchy and soft texture of this samosas after bake. For parties and gatherings we can made them in batch and its a relief from frying samosas . Other than baking the process of making this samosas are same as normal samosas. Enjoy this samosas with tamarind jaggery chutney or plain tomato ketchup.

Ingredients Serving: 4

  1. For making dough : 2 cup atta(whole wheat flour)
  2. 1/4 cup vegetable oil
  3. 1/2 tsp baking soda
  4. 1/2 tsp salt
  5. Water as needed
  6. For stuffing 1 cup blanched small pieces of cauliflower
  7. 1 cup diced and peeled potato
  8. 2 tbsp raw peanuts
  9. 1 tbsp grated ginger
  10. 1 tsp whole cumin seeds
  11. 1 tsp whole fennel seeds
  12. 1 pinch of hing powder
  13. 1 dried red chili
  14. 5 small pieces of green chilies
  15. 1 tsp turmeric powder
  16. 1 tbsp sugar
  17. 1 tbsp oil
  18. ! tsp kasuri methi
  19. Salt for seasoning
  20. For baking Cooking oil spray

Instructions

  1. Making Dough For making samosa first we will start with making dough.
  2. In a bowl add 2 cup atta(wheat flour) ,oil and salt and baking soda keep mixing with hand until the dough becomes crumbly and take shape while making shape.
  3. Add water and make a medium dough . Cover it and rest it for 20 minutes.
  4. For stuffing In a frying pan heat oil, add raw peanuts fry it a bit then add dried whole red chili, hing powder, fennel and cumin seeds.
  5. After seeds start crackling add blanch cauliflower and diced potato. Fry for 2 minutes then add salt, sugar, turmeric powder,grated ginger and green chilies. mix it properly then let it cook in low flame. Stir occasionally until vegetable
  6. Making samosas Preheat oven into 350 F(180 C).
  7. Divide dough into 6 - 7 balls. with a rolling pin roll each dough in a round shape to medium thickness then cut them in middle.
  8. Take one portion of flatten dough and shape like a cone overlapping flat side together. Brush water before joining. Now put 1 and 1/2 tsp of stuffing inside the samosa cone and seal the edges with brushing water. cover them with kitchen t
  9. In a baking tray place a parchment paper and line up all samosas. Spray cooking oil over them.
  10. Bake samosas for 40 -45 minutes or when it nice golden in color. Cooking time varies from oven to oven so after 30 minutes check them.
  11. Enjoy them with sweet chutney or green chutney.
