ABOUT Sooji Dhokla/Rava Dhokla/Semolina Dhokla.. RECIPE

An instant dhokla made with sooji without any fermentation. Spongy and soft dhoklas are ready in no time. However making this is an art and many beginners tend to fail in this. It needs little practice. The batter should be thick like that of an idli batter and add eno fruit salt just before steaming and mix it with a very light hand. Do not be harsh on it. These are some tricks to be followed and you will end up with spongy dhoklas that just melt in your mouth. A perfect breakfast for the elderly and everyone else too. Happy Steaming !!!!!!!!!!!

Ingredients Serving: 8

  1. FOR THE BATTER ; Semolina fine variety 2 cups
  2. Ginger grated 1 tbsp
  3. Salt 1 tsp
  4. Sour curd or buttermilk 1 cup
  5. Green chillies chopped/crushed 2 tbsp
  6. Coriander leaves chopped 2-3 tbsp
  7. Asafoetida 1/8th tsp
  8. Oil 1 tbsp
  9. Eno fruit salt 2 tbsp
  10. FOR THE TEMPERING ; Oil 2 tbsp
  11. Curry leaves 1/4th cup
  12. Mustard seeds 1 tbsp
  13. Grated Coconut 1/4th cup
  14. Dry red chillies 3 to 4
  15. Coriander leaves chopped 2 tbsp

Instructions

  1. Make a thick batter using all the ingredients listed under it.
  2. Set aside for almost 20 minutes.
  3. Meanwhile heat water in a big vessel to be used for steaming.
  4. Grease the dhokla plates and keep ready.
  5. Add the eno fruit salt just before steaming and give a light mix.
  6. Spread on the plates and steam on high heat for about 18 to 20 minutes.
  7. Heat oil in a pan for the tempering.
  8. Add curry leaves and the dry red chillies.
  9. Add mustard seeds next and some coriander leaves.
  10. After they crackle, switch off and pour on the steamed dhokla.
  11. Cut into desired shapes, sprinkle some grated coconut and sesame seeds on top.
  12. Serve hot with green chutney alongside.
