ABOUT Golden slabs with Melting mushrooms RECIPE

This pan fried rice dish is a twist to the traditional risotto recipe.

Ingredients Serving: 2

  1. Arborio rice 1/2 cup
  2. White wine 1/2 cup
  3. Hot water approx 1.5 cup
  4. Garlic paste 2 tsp
  5. Mushrooms 3/4 tsp
  6. Cream 1 tbsp
  7. Salt and pepper
  8. Oregano 1/2 tsp
  9. Processed cheese 1 tbsp
  10. Parmesan cheese 1 tbsp
  11. Butter 2 tbsp
  12. Basil leaves 4-5
  13. Some moulds

Instructions

  1. Heat 1 tbsp butter in pan. Then stir fry the 1 /2 tsp of garlic.
  2. Next, add the arborio rice and stir well till the butter coats the rice properly. Pour in the white wine and cook the rice till it is absorbed well. Also add salt and pepper as per taste and mix well.
  3. Continue pouring in hot water at regular intervals. Once cooked add in the processed cheese and stir well.
  4. To make the mushrooms, take a pan, heat 1 tbsp butter in it. Add the garlic and fry well. Mix in the sliced mushrooms and give a good stir on a high heat.
  5. Add the salt, pepper and cream. Mix it well together and remove it from the fire.
  6. To plate, heat a girdle/pan. Keep a mould on it, add a few drops of oil/ butter on the pan.
  7. Fill the mould with rice and roast till it becomes golden and crisp.
  8. Roast the other side as well, then demould the rice and transfer it to a plate topped with the mushrooms.
  9. Sprinkle parmesan cheese and some oregano and serve it hot.
