ABOUT Kovakai/Tindora/Ivy gourd Rice - OPOS RECIPE

A simple and healthy one pot lunchbox recipe. Ivy gourd helps to control blood sugar, blood pressure and reduces the risk of heart disease.

Ingredients Serving: 2

  1. Raw Rice - 1 and 1/2 cup
  2. Ivy gourd - 1 cup, chopped lengthwise
  3. Channa Dal - 2 tbsp
  4. urad dal - 2 tsp
  5. Mustard - 1 tsp
  6. Jeera - 1 tbsp
  7. Groundnut - a handful
  8. Salt as required
  9. Gingely/Sesame Oil - as required

Instructions

  1. Cook the rice with a ratio of 1: 2 water for 2 whistles on a high flame. Simmer for 10 mins, then cool the rice with a tsp of sesame oil.
  2. Shallow fry the ivy gourds in oil till they are crisp and cooked.
  3. Heat oil in a pan, now temper the mustard seeds, urad dhal, channa dhal, jeera and groundnuts.
  4. Add the cooked rice and fried ivy gourds pieces into the tempering and mix well. Then add in salt as per taste.
  5. Simmer the rice for a few mins.
  6. Serve hot for best taste.

Pls check the technique on oposchef YouTube and Opos support group on fb to learn the proper technique...this recipe is not Opos recipe
