ABOUT Burghul with Jaggery(Lapsi) RECIPE

Burghul with Jaggery (Lapsi) is an ideal healthy winter dish suitable for expectant mothers and elderly people. This recipe is wholesome since burghul (broken wheat) is rich in fibre and iron and jaggery is rich in vitamins and minerals.

Ingredients Serving: 4

  1. Burghul (broken wheat) 1/2 cup
  2. Water 1 cup
  3. Jaggery 100g
  4. Ghee 2 tablespoons
  5. fennel seeds 1 teaspoon
  6. Salt a pinch
  7. Cardamom powder 1 teaspoon
  8. Unsalted pistachios and almonds thin slivers 1 tablespoon each

Instructions

  1. In a pressure cooker heat ghee,
  2. Add the burghul to the ghee and roast it for a few minutes on medium heat gently stirring throughout.
  3. While roasting add the cardamom powder, fennel seeds and a small pinch of salt.
  4. When the burghul is golden to light brown in colour add the water.
  5. Cover and pressure cook for two whistles.
  6. Let pressure release and open lid.
  7. Fluff up the burghul with fork and jaggery and a little water
  8. Also add the slivers of dry fruits and cook on slow flame for ten minutes
  9. Serve hot.
