While whole grain brown rice and red rice also contain beneficial antioxidants, only black rice contains anthocyanin. Additionally, black rice also contains important antioxidant Vitamin E, which is useful in maintaining eye, skin, and immune health in addition to other important functions. Black rice has been eaten in regions of Asia for thousands of years; in fact for centuries it was reserved for only Chinese royalty. Today this type of rice is picking up in popularity and popping up in more health food stores across the world. Pandan leaves are wonderful for getting rid of pain of all kinds including arthritis, chest pains, cramps,earaches, and headaches. This is an ideal dessert to satisfy your sugar craving and a great healer

Ingredients Serving: 2

  1. 100 gms Black Rice soaked overnight/8 hours and strained
  2. 2 tbsn thick coconut creme
  3. 5-6 tbsn jaggery crushed/powdered
  4. 1 big pandan leaf
  5. Salt to taste
  6. Water as needed

Instructions

  1. Strain the black rice and keepaside
  2. Add 2 cups water in a pressure cooker and cook the rice upto 3 whistles or till done
  3. Check if the rice is done. The mix should be thick and slightly sticky
  4. Transfer rice mix in a saucepan/ wok and add 1 cup water, pandan leaf tied in knot and bring it to boil
  5. Next add salt to taste and mix
  6. Add the jaggery and reduce the heat and let simmer till thick
  7. In a bowl combine coconut creme and salt
  8. Once rice mix is done, get rid of the pandan leaf and let cool
  9. Serve chilled or at room temperature topped with a spoonful of coconut creme
