Cinnamon coffee muffins(eggless)

ABOUT Cinnamon coffee muffins(eggless) RECIPE

Whole spices are very flavourfull and combine well with other flavours even while showing their predominance. One such spice is cinnamon. When combined with coffee still gives away its predominance in taste, flavour and fragrance.

Ingredients Serving: 8

  1. Apf + whole wheat flour - 1 1/2 cups
  2. Coco Powder - 1/4 cup
  3. Baking powder - 1 1/2 tsp
  4. Baking Soda - 1/4 tsp
  5. Curd - 1/2 cup
  6. Oil - 1/4 cup
  7. Powdered Sugar - 1/2 cup
  8. (1 cup if not frosting)
  9. Vanila essence - 1/2 tsp
  10. Water / milk - 1/4 cup
  11. Coffee powder - 1 tsp
  12. Cinnamon powder - 1 tsp
  13. If frosting your muffins then you'll need:
  14. Sugar syrup :
  15. Sugar - 2 tbsps
  16. Water - 1/2 cup
  17. Chocolate Ganache :
  18. Dark Chocolate - 1 cup
  19. Fresh cream - 1 cup
  20. Butter - 2 tbsps

Instructions

  1. Make a decoction of coffee powder with cinnamon powder and water or milk. Keep aside.
  2. Preheat oven to 180 °
  3. Add curd and sugar powder to a bowl. Whisk till creamed.
  4. Add the oil, Vanila essence and cinnamon coffee decoction and mix.
  5. Add the baking powder and baking soda. Whisk and leave to froth for 5 minutes.
  6. Seive the flours with coca powder into the wet mixture
  7. Fold gently using cut and fold method.
  8. Line a muffin tray with muffin liners and spoon in 3/4 of the muffin cup with the batter
  9. Bake at a reduced temperature of 170° for 20 minutes
  10. Check in the last few minutes with skewer for doneness. May take couple of minutes extra depending on heat of your oven.
  11. Lovely cinnamon coffee muffins hot out of the oven. Cool it further on a wire rack for frosting. Or have it right away.
  12. Make the sugar syrup melting the sugar in water by heating till dissolved
  13. Make the ganache. heat the fresh cream, pour it over chopped chocolate. Add the butter too. And mix well with a spatula till smooth and silky. Fill in the piping bag and leave it in the refrigerator for an hour to thicken.
  14. Wet the muffins by drizzling some sugar syrup and then start piping with the frosting.
