Ingredients Serving: 2

  1. Basmati rice - 300gm
  2. Chicken - 300 gm (cleaned & drained)
  3. Bay leaf - 1
  4. Chicken stock - half cube
  5. Onion - half (chopped)
  6. Ginger - 20 -25gm (chopped)
  7. Curd - 2 tbsp
  8. Badam , Pista , Raisins - 15gm
  9. Saffron strands - 1/8 tsp ( mix with hit milk )
  10. Ghee - 3tbsp
  11. Milk - 350ml
  12. Sugar - 1/4 tsp
  13. Salt - required quantity
  14. Kalonji or black jeera - 1/4tsp
  15. Cumin seeds -1/4 tsp
  16. Coriander seeds - 1/4 tsp
  17. Chilli powder - 1/2 tsp
  18. Cinnamon, Cardamom, Clove - 1/4 tsp (each)

Instructions

  1. Grind coriander, cumin, kalonji, salt, chilli powder, half of the ginger, cinnamon, cardamom, clove powder .
  2. Add the grinded powder to the chicken mix it well.
  3. Now place the chicken in a cotton cloth and tie it well.
  4. Put it in a boil water and allow the chicken to cook.
  5. Remove the chicken from water, once it gets cooked.
  6. Roast the nuts in the ghee and keep it aside
  7. Take a wide vessel add ghee.
  8. Now add the remaining cinnamon, cardamom, clove powder.
  9. Add onion , ginger when smell comes
  10. Saute it until it turns to slight brown colour.
  11. Now add rice,salt, sugar, chicken stock . Saute it for a minute.
  12. Add milk and allow it boil. Cook the rice in a low flame,.
  13. Once the rice is cooked divide into three portions.
  14. Now add rice , half of the bay leaf , chicken, saffron milk , roasted nuts and curd,
  15. Repeat the process one more time.
  16. Finally add rice , close it with aluminium foil or lid keep it in dum for 10 to 15 minutes.
