Ingredients Serving: 4

  1. Mutton - 750 gms
  2. Cashew nuts - 1 tbsp
  3. Almonds - 1 tbsp
  4. Pistachio - 1 tbsp
  5. Raisins - 2 tbsp
  6. Clarified butter - 1 cup
  7. Sliced onion - 2
  8. Ginger paste - 1 tsp
  9. Garlic paste - 1 tsp
  10. Cumin seeds - 1/2 tsp
  11. Crushed fennel seeds - 1/4 tsp
  12. Coriander powder - 1 tsp
  13. Cinnamon - 2 sticks
  14. Bay leaf - 2
  15. Cloves - 8
  16. Green cardamom - 4
  17. Black cardamom - 2
  18. Whole black pepper - 7 - 8
  19. Salt - to taste
  20. Basmati rice - 3 cup
  21. Water - 6 cup

Instructions

  1. Blanch the almond and remove the skin.
  2. Heat pan with clarified butter.
  3. Add all dry fruits one by one fry it and keep aside
  4. Again heat clarified butter in a pan.
  5. Add mutton pieces and fry in a medium flame and keep aside.
  6. Add sliced onion fry until golden brown.
  7. Add ginger garlic paste,cumin seeds,fennel seeds,coriander powder,salt,bay leaf,cinnamon,cardamom green and black,cloves and whole black pepper. Cook in a medium flame for 3 - 4 mins.
  8. Add soaked rice and water and also add half done mutton and cover it.
  9. Cook in a medium flame till done or 10 - 15 mins.
  10. Serve hot with raita.
