ABOUT Shahi Lauki Korma RECIPE

Korma is a very royal and Mughlai dish. Today i have tried to innovate lauki in a new way. Shahi Lauki Korma is a very yummy and delectable dish made with lauki as main ingredient. Generally kids don't like this vegetable. But this healthy shahi lauki korma is really irrestible. Nobody can say no to it. So cook lauki in this way and give healthy and restaurant style treat to your loved ones at home.

Ingredients Serving: 5

  1. Lauki 500 grams
  2. Finely chopped onions 1/2 cup
  3. Chopped tomato 1 cup
  4. Ginger garlic paste 1/2 Tablespoon
  5. Salt as per taste
  6. Garam masala 1 teaspoon
  7. Turmeric powder 1/2 teaspoon
  8. Red chilly powder 1/2 Teaspoon
  9. Coriander powder 1 teaspoon
  10. Cumin seeds 1 teaspoon
  11. hing 1 pinch
  12. Bay leaves 2
  13. Coarsely crushed Green cardamom 2
  14. Ghee 2 tablespoon
  15. Milk 1 cup
  16. Cream 2 tablespoon
  17. cashew nuts paste 1 tablespoon
  18. Foxnuts (makhana) 1/2 cup
  19. Raisins 1 tablespoon
  20. Almonds 1 tablespoon
  21. Cashew-nuts 1 tablespoon
  22. Coriander leaves to garnish 4 tbsp

Instructions

  1. Wash and peel bottle gourd. Cut into small cubes. Keep it aside.
  2. Heat ghee in a pan and saute dry fruits over low flame until golden brown. Take dry fruits out and drain on kitchen towel. Keep it aside.
  3. In same pan, add cumin seeds and let them splutter. Add hing, bay leaves and green cardamom. Saute for few seconds.
  4. Add chopped onions and saute till transparent.
  5. Add ginger garlic paste and saute for a minute.
  6. Next add the chopped tomatoes and saute till tomatoes become mushy and ghee releases .
  7. Add bottle gourd with salt and all spices. Mix well
  8. Add milk and half of the cream . Cover and cook till the bottle gourd becomes soft
  9. Add cashew nuts paste for enhanced flavor. Add half of the roasted dry fruits. Mix well.
  10. Simmer and cook for 2-3 minutes and switch off the flame.
  11. Garnish with coriander leaves, cream and rest of the dry fruits. Serve hot with naan, rice or chapati.
