Ingredients Serving: 6

  1. For Filling :- 250 gm spinach leaves
  2. 1 cup shredded mozzarella cheese
  3. 1 cup ricotta cheese
  4. 1/2 cup grated Parmesan cheese
  5. 1/4 tsp salt
  6. 1/4 tsp ground black pepper
  7. 1/8 tsp ground nutmeg
  8. For NOODLES :- 6 Lasagna noodles
  9. For SAUCE- 2 tsp olive oil
  10. 1 small onion, diced
  11. 1 can of crushed tomatoes
  12. 2 garlic cloves, minced
  13. 1/4 tsp Black pepper, crushed
  14. 2 tsp dried basil
  15. 1 tsp dried oregano
  16. 1 tsp dried parsley
  17. Salt to taste

Instructions

  1. For SAUCE- Heat oil in a pan. Saute onion and garlic till translucent. Add crushed tomatoes, salt and seasonings. Cover and cook for at least 20 minutes over low flame. Keep it aside
  2. Preheat oven to 180 deg
  3. Cook and drain lasagna noodles as per package instructions.
  4. Blanch spinach leaves in boiling water for 30 seconds. Drain and immediately transfer in ice cold water. Drain and squeeze thoroughly. Chop the leaves roughly.
  5. Mix ricotta cheese, 3/4 cup mozzarella cheese, Parmesan cheese, blanched spinach leaves, salt , pepper and nutmeg in a bowl
  6. Pour 1 cup sauce into 8*2" baking dish.
  7. Spread 1/2 cup cheese spinach mixture over each lasagna noodle sheet. Roll up and place over sauce, seam side down.
  8. Top the rolls with remaining sauce and mozzarella cheese.
  9. Bake covered for 20 minutes. Uncover and bake for another 5-10 minutes. Slice and serve warm
