Motorsutir kochuri is Bangali version of Matar Kochori,it is made specialyy with winter fresh peas.It goes well with Bengali aloor dum.The stuffing can be prepared ahead of time, minimum 2 hrs to maximum 1 day before

Grind peas, grated ginger with little water to form smooth paste
Mix ginger paste,turmeric powder,red chili powder using little water to form smooth masala paste
Heat mustard oil in a pan and splutter cumin seeds
Add masala paste in pan and mix well. Saute for 1 minute
Add ground peas mixture and keep stirring continuously.
Add dry roasted cumin powder and salt. Mix well
Cook until oil separates. Switch off. Cool the mixture to room temperature
Grease palms, take 1 tsp of mixture and make small balls. The mixture can be refrigerated too for later use
Add flour with little salt in a big bowl and mix well
Make well in the center of the flour and pour oil and clarified butter (ghee). Mix well until crumbly
Add warm water gradually and knead soft dough
Cover dough with foil or cling film for 15 minutes. Divide dough into equal portions and shape them into balls
Press dough ball gently at center to make small hole
Now add a ball of stuffing to this hole and gently seal edges completely
Lightly flatten it with a rolling pin
Heat 2 cups oil in a pan over high heat and then simmer
Deep fry kachori on both sides until golden brown. Fry kachoris in batches
Serve Kachori with Bengali aloo dum or with gravy of your choice
