Ingredients Serving: 4

  1. All purpose flour/maida 1 cup
  2. semolina 2 tbsp
  3. oil 2 tsp
  4. spinach puree 3 tbsp
  5. salt to taste
  6. oil for frying
  7. water as required
  8. For Filling
  9. Boiled green peas 1/3 cup
  10. gram flour 2 tbsp
  11. salt to taste
  12. cumin seeds 1/2 tsp
  13. fennel seeds 1/2 tsp
  14. onion chopped 2 tbsp
  15. red chili powder 1 tsp
  16. coriander powder 1 tsp
  17. water 2-3 tbsp
  18. oil 1 tbsp
  19. For green curd chutney
  20. curd 1/2 cup
  21. coriander leaves 3 tbsp
  22. green chili 1
  23. mint leaves 1 tbsp
  24. salt to taste
  25. For Serving
  26. sweet tamarind chutney 2 tbsp
  27. Sev 2 tbsp
  28. Pomegranate seeds 2 tbsp
  29. Boiled , chopped potato 1/2 cup

Instructions

  1. In a bowl, add maida and semolina
  2. Add salt ,spinach puree,2 tsp of oil and mix well
  3. Add adequate water and knead a semi-soft dough . Keep it aside for 20 min. Divide dough into equal portions
  4. Roll dough into small puris. Heat oil for frying over medium heat
  5. Deep fry puris in hot oil until puffed up and golden brown
  6. For filling: Heat 1 tbsp oil in a pan, splutter cumin seeds and fennel seeds
  7. Add onions and saute until translucent
  8. Add gram flour and cook for 2-3 min.
  9. Add boiled peas ,salt red chili powder, turmeric powder , coriander powder and mix well
  10. Add water and mix well, Cook until mixture dries up. Keep it aside
  11. For Chutney: Blend coriander leaves,mint leaves,green chili, curd and salt to form smooth chutney
  12. Add 1 tbsp of water to chutney and mix well
  13. Assembling Kachori: Make a small hole at the center of kachori
  14. Add small pieces of boiled potatoes, sprinkle some salt
  15. Add green peas filling on top of potatoes
  16. Add sweet tamarind chutney on top
  17. Add green chutney. Garnish with sev and pomegranate seeds. Serve immediately
