Ingredients Serving: 4
All purpose flour/maida 1 cup
semolina 2 tbsp
oil 2 tsp
spinach puree 3 tbsp
salt to taste
oil for frying
water as required
For Filling
Boiled green peas 1/3 cup
gram flour 2 tbsp
salt to taste
cumin seeds 1/2 tsp
fennel seeds 1/2 tsp
onion chopped 2 tbsp
red chili powder 1 tsp
coriander powder 1 tsp
water 2-3 tbsp
oil 1 tbsp
For green curd chutney
curd 1/2 cup
coriander leaves 3 tbsp
green chili 1
mint leaves 1 tbsp
salt to taste
For Serving
sweet tamarind chutney 2 tbsp
Sev 2 tbsp
Pomegranate seeds 2 tbsp
Boiled , chopped potato 1/2 cup
Instructions
In a bowl, add maida and semolina
Add salt ,spinach puree,2 tsp of oil and mix well
Add adequate water and knead a semi-soft dough . Keep it aside for 20 min. Divide dough into equal portions
Roll dough into small puris. Heat oil for frying over medium heat
Deep fry puris in hot oil until puffed up and golden brown
For filling: Heat 1 tbsp oil in a pan, splutter cumin seeds and fennel seeds
Add onions and saute until translucent
Add gram flour and cook for 2-3 min.
Add boiled peas ,salt red chili powder, turmeric powder , coriander powder and mix well
Add water and mix well, Cook until mixture dries up. Keep it aside
For Chutney: Blend coriander leaves,mint leaves,green chili, curd and salt to form smooth chutney
Add 1 tbsp of water to chutney and mix well
Assembling Kachori: Make a small hole at the center of kachori
Add small pieces of boiled potatoes, sprinkle some salt
Add green peas filling on top of potatoes
Add sweet tamarind chutney on top
Add green chutney. Garnish with sev and pomegranate seeds. Serve immediately
