ABOUT Microwave Palak Paneer RECIPE

A different version to palak paneer. Goes well on party and any sort of get together

Ingredients Serving: 8

  1. Palak 500 g finely chopped
  2. Paneer 250 g , cubed
  3. Tomatoes 250 g, finely chopped
  4. Garlic 4 - 5 pods, chopped finely
  5. Ginger 1 inch piece, grated
  6. 3-4 Green chilies - adjust
  7. Salt to taste
  8. Turmeric powder 1/4 teaspoon
  9. Garam masala 1 teaspoon
  10. 1 tbsp Red chili powder
  11. Coriander powder 1/2 teaspoon
  12. Cashew nuts 4 tbsp for garnishing
  13. 5 tsp Refined oil or desi ghee
  14. Malai or cream 1 tablespoon

Instructions

  1. Boil spinach in 1/2 cup water with salt for 3-4 minutes. Blend spinach to smooth puree
  2. Heat 2 teaspoon ghee or oil in a pan. Fry cashews and paneer until crisp and golden brown. keep it aside
  3. In the same pan, add garlic, ginger and saute until aromatic. Add spinach puree , red chili powder, 1/4 teaspoon coriander powder and 1/2 teaspoon garam masala and cook till all the water evaporates. Keep it aside
  4. In separate pan, heat 2 tsp oil. Add tomatoes with red chili powder, 1/2 tea spoon garam masala, little salt and 1/4 teaspoon coriander powder. Mix well. Cook until tomatoes are mushy and oil starts leaving sides of the pan. Keep it aside
  5. Grease the baking dish and spread paneer cubes evenly , spread tomato paste layer and level it . Add spinach paste layer and spread evenly. Now add fried cashew nuts on top . Sprinkle cream on top
  6. Microwave for 5 minutes before serving. Slice and serve
