ABOUT Palak Corn RECIPE

Palak corn nutritious vegetable made using vitamin A rich spinach and sweet corn. The palak corn vegetable is a mellow preparation of nutrient rich spinach and sweet corn. These two star ingredients complement each other well not just in flavor and texture, but in looks too. The corn kernels look like shiny pearls laid on bright green silk, kindling one's appetite both through the aroma and the visual appeal.

Ingredients Serving: 4

  1. 2 bunch spinach leaves
  2. 1 cup sweet corn
  3. 4 tbsp desi ghee
  4. 2 onions, chopped
  5. 1 inch ginger, grated
  6. 4 - 5 garlic cloves, crushed
  7. 2 green chili, chopped
  8. 2 tomatoes, chopped
  9. 1/2 tsp salt
  10. 1/4 tsp turmeric powder
  11. 1/2 tsp red chili powder
  12. 1/2 tsp garam masala
  13. 2 tbsp gram flour

Instructions

  1. Blanch spinach leaves with salt and turmeric
  2. Blend spinach to smooth puree and keep it aside.
  3. Heat ghee in a pan and splutter cumin seeds.
  4. Add garlic, green chilies and ginger saute over medium heat for 2 minutes.
  5. Now add onions and saute until translucent
  6. Add chopped tomatoes,red chili powder, garam masala and mix well
  7. Add spinach puree, sweet corn, gram flour and mix well. Cook over medium heat for 5 minutes.
  8. Serve hot with chapatis or Bajra roti.
