ABOUT Sindhi Sai Bhaji RECIPE

This is a typical sindhi dish which has a lot of nutritive value because of the green vegetables,lentils as well as variety of other vegetables.Very simple dish which goes well with roti as well as rice.This is a very simple version in which I have made Sai bhaji in pressure cooker so that all ingredients are cooked together at once.

Ingredients Serving: 4

  1. Spinach - 1.5 cups
  2. Fenugreek leaves - 1/2 cup
  3. Amaranth leaves-1/2 cup
  4. Gram daal/chana dal-1 cup
  5. Tomatoes-3
  6. Oil-2 tbsp
  7. Cumin seeds-1 tsp
  8. Ginger chili paste-1 tsp
  9. Potato-1
  10. Brinjal-1
  11. Pumpkin-100 gms
  12. Onion-2
  13. Turmeric-1/2 tsp
  14. Red chili powder-1 tsp
  15. Salt to taste
  16. Coriander powder-1 tsp
  17. Garam masala-1/2 tsp
  18. Lemon juice-1 tsp
  19. Green garlic-1/4 cup
  20. Coriander leaves -2 tbsp

Instructions

  1. Wash and chop the spinach, fenugreek and amaranth leaves.
  2. Wash and soak chana daal for 2 hours.
  3. Chop all the veggies
  4. Heat oil in a cooker
  5. Splutter cumin seeds and hing .
  6. Add ginger chili paste. Mix well
  7. Now add chopped onions and tomatoes.
  8. Saute for 2 minutes.Add salt,turmeric,chili powder,coriander powder. Mix well
  9. Drain excess water from chana dal and add to cooker. Mix well
  10. Add chopped potato,pumpkin,brinjals. Mix well
  11. Now add the chopped greens. Stir well
  12. Add one and half cup of water and pressure cook for 5-6 whistles
  13. Once steam is released, add lemon juice and garam masala. Mix well
  14. Blend manually with wooden blender until everything mixes well and becomes smooth paste
  15. Serve as is or temper with garlic and serve.
  16. For tempering: Take green garlic and chop finely.Keep the green part separate for garnishing.
  17. Heat 1tsp oil in a small pan.
  18. Add the white part of garlic.Saute till it becomes brown.
  19. Add the tempering to the cooker and immediately close the lid so that the flavor of garlic infuses with the vegetables.
  20. Before serving garnish with green garlic and coriander.Serve hot with roti or rice.
