This recipe is unique in the method it is prepared by using a specially designed earthenware or manchatti(tamil). It tastes heavenly with hot steaming rice with a dollop of ghee. Even more tastier when the cooked contents are transferred to a bowl and rice is mixed with the remaining in the earthenware and your mom gives you a ball of it.

Chop the shallots and keep it aside
Use serrated earthen ware for cooking this dish
Heat earthen vessel, add the chopped greens
Add adequate water. Mix well. When it is 50% cooked, add tamarind
In a Kadai , heat oil and splutter mustard seeds. Add urad dal, jeera, shallots, chilies and asafoetida in order. Stir well till shallots turn pink.
Add this mixture to the greens and mix well. Cook until tender
Mash well the cooked amarnath, either traditionally or in blender
Serve with hot steamed rice .
