ABOUT Green Garlic and Flax-Seeds Thepla RECIPE

Theplas belong to the Gujarati cuisine of India and are usually made with Methi leaves (Fenugreek leaves) which is also a winter delicacy but I thought of using garlic greens and further addition of flax seeds instead of regular sesame seeds or carom seeds to increase the nutrition value of the dish.

Ingredients Serving: 3

  1. 1 small bunch of Green Garlic Chives finely chopped
  2. Whole wheat Flour – 1 1/4 cup + additional flour for dusting
  3. Flax seeds – 11/4 tbsp
  4. Turmeric Powder – 1/2 tsp
  5. Red chili powder – 1/2 tsp
  6. Oil – 1 tsp + additional to drizzle
  7. Water as required to knead
  8. Hing – a pinch
  9. salt as per taste

Instructions

  1. In a medium sized bowl, add the flour, turmeric powder, flax seeds, hing, salt, red chili powder and the green garlic chives and mix everything well
  2. Add water and knead for 10 minutes to form smooth dough. Add a tsp of oil to dough and knead for atleast for 5 minutes. Rest dough for 20 minutes
  3. Divide dough into equal portions and roll into rotis.
  4. Place rotis on the hot griddle or tawa. Drizzle little oil. Flip and cook other side until golden brown. Drizzle oil all over
  5. Serve hot with pickle and salad or curd.
