Winters are here, this is the best season to have greens n greens. I love green vegetables most. This recipe is having all green vegetables.

Ingredients Serving: 4

  1. 2 Cups Basmati Rice
  2. 1/2 Cup curd (optional)
  3. 2 onions finely chopped
  4. 2-3 Green Chilies chopped (adjust)
  5. Garlic-ginger paste 1 tsp
  6. Ghee 4-5 tbsp
  7. 1 bowl of vegetables ( Chopped and blanched beans, boiled peas , capsicum chopped)
  8. Spring onion -2
  9. Spinach - 250 gms blanched and pureed
  10. Salt as per taste
  11. Garam masala 1tsp
  12. Cumin seeds 2 tsp
  13. Pepper 1/2 tsp
  14. Kasuri methi 2 tbsp
  15. 1 tbsp oil

Instructions

  1. Cook rice in 4 cups water and allow to cool
  2. Heat oil & ghee in deep bottom pan. Splutter cumin seeds
  3. Add ginger garlic paste and chopped chilies, saute until raw aroma goes away
  4. Add chopped onions, saute till golden brown
  5. Add green vegetables n saute them for 3-4 minutes
  6. Add Spinach puree , salt, pepper ,garam masala and kasuri methi. Mix well
  7. Add curd for tangy taste and gently mix
  8. Finally add Rice and mix well. Cover the lid and cook on low flame till all the flavors infuse into rice.
  9. Switch off the Gas and let the pan remain covered for 10 mins
  10. Open the lid and Sprinkle green part of spring onion
  11. Serve hot with bottle gourd Raita
