Kadalai Mittai or Peanut Candy is very famous in South India. Peanut Chikki is prepared by sugar. Today I prepared with jaggery syrup. We can still find this comfort snack in any petty shop in Tamil Nadu, but nothing can beat the taste straight away from the place Kovilpatti, Tamil Nadu. Kadalai Mittai is a traditional Indiansweet generally made from peanuts and jaggery. It is one of the most nutritious snack which is liked by both children and adults. Peanuts are a great source of protein and jaggery is good source of iron making it total package of nutrients. It an ideal choice for a nutritious snack without any side effects. Yummy and tasty Kadalai Mittai is made in famous south Indian city of Kovilpatti. The preparation of Kadalai Mittai Or Peanut Candy is very simple and consists of first preparing the hot jaggery syrup with a minimum of water, adding peanuts to the syrup to coat them (with the syrup) and then transferring them to a wooden mould, then rolling them to a thickness of about 6–8 mm using a wooden roller. They are also placed into any steel plate for cooling, cutting into slabs and packing. In homes, smaller quantities are hand rolled with wooden rollers. Once the peanuts are ready they are topped with shredded coconut to give it a very fancy yet beautiful appearance.

Ingredients Serving: 5

  1. Raw Peanuts - 1 Cup
  2. Grated Jaggery - 3/4 Cup
  3. Water - 1/4 Cup
  4. Aluminium Foil Tray - 1
  5. Ghee or Butter - 1 Tsp

Instructions

  1. Heat a pan or Kadai and dry roast the peanuts till it becomes slightly brown in colour.
  2. Transfer the roasted peanuts into a plate and allow them to cool for sometimes.
  3. Once cooled down, peel the skin by using hands or placing them in a clean cloth using our hands rub it well.
  4. Remove the skin, break into two pieces and then take the peanuts only, keep it aside.
  5. Jaggery Preparation: Take jaggery in a thick bottom pan and pour over 1/4 cup of water.
  6. When it is melted, strain it through a sieve because there might be some dust or dirt.
  7. Now pour this water back into the pan and boil it up. Let it boil on a medium flame for 10 minutes.
  8. Stir it continuously until we get 1/3 consistency. Keep on stirring otherwise it will get stick into the pan.
  9. In one particular stage, the syrup gets thick and reaches hard ball stage.
  10. This is the right stage to turn off the stove and add the jaggery syrup.
  11. Now put the peanuts into the jaggery syrup and mix well.
  12. Transfer this mixture into the butter coated aluminium tray.
  13. Press this mixture with a spoon.
  14. Allow it to cool for 5 minutes. Using a knife cut the mixture into small pieces.
  15. Remove from the Aluminium foil tray and serve.
