ABOUT Methi ( Fenugreek Leaves ) Muthia RECIPE

Methi muthia are steamed or fried dumplings made from gram flour, wholewheat flour and fenugreek leaves. I have made fried one as am going to use them in making undhiyu.

Ingredients Serving: 6

  1. 2 and 1/2 cups of washed and finely chopped fenugreek leaves/Methi leaves
  2. 1/2 cup of wholewheat flour
  3. 1/2 cup of Gram flour/Besan
  4. 2 tbsp of crushed ginger and chillies
  5. 1 tsp of Red chilli powder
  6. 1/2 tsp of turmeric powder
  7. 1 tbsp of sugar
  8. 1 tbsp of lemon juice
  9. salt as per taste
  10. Pinch Of Baking Soda
  11. 3 tbsp of oil
  12. Oil for frying

Instructions

  1. Chop and wash Methi leaves and keep aside.
  2. Add salt to Methi leaves and mix properly and keep aside for 5 minutes.
  3. Squeeze out all the water from Methi leaves and keep it in a bowl.
  4. Add wholewheat, Besan, crushed ginger-chilli, red chilli powder, turmeric powder, salt, sugar, oil, lemon juice and baking soda to Methi leaves.
  5. Mix all the ingredients properly
  6. With the wet hand knead into soft dough. Add 1/4 tsp of oil to the dough and knead again for 3 minutes.
  7. Divide the mixture into 15 equal portions and shape each portion roughly into an oval by rolling it between your palms and fingers.
  8. Heat oil in kadai or non-stick pan on medium heat
  9. Add few Muthias to oil at a time.
  10. Deep- fry them till golden brown in colour from all sides
  11. Remove them on absorbent paper and let them cool down completely
  12. You can serve them with your favourite chutney or you can use them in making undhiyu
