everthing in mini size and vada and pav too these can be served in starters they look cute too,small vadas placed in between small vadas make them more attractive

Ingredients Serving: 2

  1. for vada- boiled and mashed potatoes 250 gms
  2. greenchilli and garlic ginger paste
  3. salt to taste
  4. 1/2 tsp aamchur powder
  5. 1/2 tsp mustard seeds
  6. 1/2 tsp cummins seeds
  7. curry leaves 4-5
  8. oil for deep frying
  9. 1tsp more oil for tempering
  10. batter- 1cup gram flour
  11. salt to taste
  12. pinch of turmeric powder
  13. 1/2 tsp of baking soda
  14. for paav-
  15. 2cups all purpose flour
  16. 1tsp yeast
  17. oil 1tsp
  18. warm water 1tbsp
  19. 1/2 cup normal water
  20. salt to taste

Instructions

  1. in a cup add yeast
  2. add sugar
  3. add water
  4. mix and keep for 15 minutes
  5. it will turn frothy
  6. in big bowl add all purpose flour
  7. add yeast mixture
  8. add 2tsp milk powder
  9. bind the soft dough and cover with cling film
  10. keep for 1 hr
  11. it will become double in size
  12. after 1hr remove cling film
  13. punch the dough and remove air
  14. on plain surface sprinkle dry flour
  15. stretch the dough to opposite side
  16. bring back to your side again
  17. do this process 5-6 times
  18. make small lemon size balls
  19. arrange in baking tray
  20. cover with damp cloth and keep for 30 minutes
  21. brush with milk and bake in preheated oven
  22. bake for 20 minutes
  23. in other bowl add mashed potato
  24. add salt
  25. add aamchur powder
  26. add greenchilli and ginger garlicpaste
  27. add corriander leaves
  28. in Other small pan add oil
  29. add mustard seeds
  30. add cummins seeds
  31. add curry leaves
  32. add this to mashed potato
  33. make small balls of lemon size
  34. keep aside
  35. make gram flour batter -----
  36. in small bowl add gram flour
  37. add salt and turmeric powder
  38. add baking soda
  39. add water and make lumpfree batter
  40. dip potato balls in batter
  41. add these to hot oil and deep fry them
  42. when paav are baked remove them
  43. let them cool completely
  44. cut paav from middle
  45. place vada in middle
  46. insert one toothpick in middle
  47. serve them with dry chutney
  48. wet chutney and ketchup
