Zarda rice is traditional indian dessert that is specially made during festivals . I make it with three flavours orange-rose-saffron.
Simply awesome.
On a medium heat in a pressure cooker Boil rice with water and Orange rinds added. Boil for one whistle.
In a kadai or pan,on medium flame add butter. Now add saunf and clove.
When it starts crackling then add boiled rice . Add dry fruits. Mix it for 3-4 minutes. Off the flame.
Now divide this rice into two parts .
In one part add dissolve kesar and sugar. Continuesly stir it till sugar properly mix in it. Off the flame.
In second part I add some fresh rose petals and some chopped dry fruits. Continuesly stir it till sugar properly mix in it. Off the flame.
Platting:- Take a bowl and a round mould. Place round mould in bowl. In inner part add white rose zarda and in outer part add kesar rice zarda. Now garnish with some fried almonds.
SERVING: 5
