ABOUT Three flavoured Zarda Rice RECIPE

Zarda rice is traditional indian dessert that is specially made during festivals . I make it with three flavours orange-rose-saffron.

Ingredients Serving: 5

  1. 1cup rice
  2. 2cup water
  3. Some orange rinds
  4. 2tbsp chopped pistachio
  5. 2 tbsp chopped almond
  6. 2tbap chopped walnuts
  7. 3-4 Cardamom
  8. 1tbsp Saunf
  9. 3-4 clove
  10. Pinch of saffron strands
  11. 2tbsp chopped cashews
  12. 4-5 whole almond
  13. Some chopped fresh rose petals
  14. 1/2 cup Sugar
  15. Butter 1/4 cup

Instructions

  1. On a medium heat in a pressure cooker Boil rice with water and Orange rinds added. Boil for one whistle.
  2. In a kadai or pan,on medium flame add butter. Now add saunf and clove.
  3. When it starts crackling then add boiled rice . Add dry fruits. Mix it for 3-4 minutes. Off the flame.
  4. Now divide this rice into two parts .
  5. In one part add dissolve kesar and sugar. Continuesly stir it till sugar properly mix in it. Off the flame.
  6. In second part I add some fresh rose petals and some chopped dry fruits. Continuesly stir it till sugar properly mix in it. Off the flame.
  7. Platting:- Take a bowl and a round mould. Place round mould in bowl. In inner part add white rose zarda and in outer part add kesar rice zarda. Now garnish with some fried almonds.
