ABOUT Vendaikai / Ladies Finger Sambar RECIPE

In sambar, when you add vegetables like drum stick, ladies finger, Radish it enhances the flavour of sambar. It makes you addicted to sambar. Ladies finger sambar is my family's favourite. It goes well with tiffen, rice and roti as well. Try this ladies finger flavoured sambar.

Ingredients Serving: 4

  1. Ladies finger 200 grams
  2. Tamarind lemon size
  3. Toor dal 1/4 cup
  4. Tomatoes 2
  5. Turmeric Powder
  6. Salt 2 teaspoon
  7. Sambar powder 2 tablespoon
  8. Curry leaves
  9. Coriander leaves
  10. For seasoning oil
  11. Mustard seeds
  12. Jeera
  13. Methi
  14. Hing

Instructions

  1. Soak lemon size Tamarind and get the extract
  2. Pressure cook 1/4 cup Toor dal and Tomatoes. Mash it.
  3. Heat oil. Add Mustard
  4. When Mustard cracks add methi, jeera and hing
  5. Add ladies finger and curry leaves. Ladies finger will lose it stickiness when you saute for few minsutes
  6. Add Tamarind extract
  7. Add Turmeric powder and 2 teaspoon salt
  8. Add 2 tablespoon sambhar powder
  9. When it is frothy add mashed Toor dal and Tomatoes
  10. Add coriander leaves
  11. Boil sambar on high flame for 5 minutes
  12. Ladies finger sambar ready to serve
