ABOUT Kaju Katli(Diwali Special) RECIPE

Kaju katli(Cashew nut fudge) is a most appreciated Indian cuisine. It is one of the easiest sweet recipe to follow required few ingredients and some basic techniques. If you stay over in North India,then during diwali festival you might recieve a box of kaju katli or dry fruits as a gift. Kaju katli is one of the most popular sweet which is gifted to relatives and friends during the Diwali festival in India. Traditionally varak or silver foil is also placed on the kaju katli. Prepare this sweet recipe at home and give a surprise to your love one's family and friends.

Ingredients Serving: 4

  1. 1 cup Cashew nut powder
  2. 1/2 cup sugar
  3. 2 tbsp milk powder
  4. 1 tbsp ghee(for greasing)
  5. 1/4 cup water

Instructions

  1. In a mixer jar add one cup cashew nuts and one tsp sugar(adding sugar in cashew nuts do not make powder sticky)grind them till smooth Powder.
  2. In a pan add sugar and water,cook it over medium flame. Stir continuously and cook until you get one string consistency.
  3. Once you get one string consistency turn off the flame. Add cashew nut and milk powder.
  4. Stir with spatula and mix it well. Grease the plate with ghee meanwhile.
  5. Transfer the mixture in the plate,add one teaspoon ghee and knead it for a minute until until it has smooth surface while it is still warm.
  6. Grease the rolling pan,roll it out thick into round shape using rolling pin. Cashew dough should be hot or warm when you start rolling it as it cool,it will harden more and become difficult to roll.
  7. Cut it using knife into diamond shape pieces separate the pieces and enjoy your favourite kaju katli,it will stay good for 5-6 days at room temperature and for ten to fifteen days in refrigerator.
