ABOUT Besan and Methi Mathri RECIPE

Besan and Methi Mathri recipe is a kind of flaky biscuit made up from gram flour and dried fenugreek leaves.

Ingredients Serving: 10

  1. Gram Flour – 1 Cup
  2. Semolina – ¼ Cup
  3. Dried Fenugreek Leaves – 1-1/2 tablespoon
  4. Red Chili Flakes – ½ teaspoon
  5. Salt – to taste
  6. Turmeric Powder – a pinch
  7. Hing – a pinch
  8. Carom Seeds – ½ teaspoon
  9. Oil – 1 tablespoon for making dough
  10. Oil –to deep fry

Instructions

  1. Take a large mouth bowl and combine all the ingredients except oil.
  2. Now add 1 tablespoon oil and mix well again.
  3. Add sufficient water and make a medium soft dough
  4. Cover it and keep it aside for 10 to 15 minutes
  5. Now divide the dough into small lemon sized balls.
  6. Take one ball and apply some oil and roll it into a small circle. With the help of a knife make some cuts in the mathri.
  7. Repeat the process with the other dough balls.
  8. Heat oil in a wok and deep fry the mathris into batches until golden in colour.
  9. Remove on an absorbent paper and let them cool down.
  10. When cooled down to room temperature store them in an air tight container
  11. Serve with tea or green chutney.
