ABOUT Healthy Bajra Muffins RECIPE

Adapted from Healthy website, gave it my own twist. These muffins are healthier, glutten free and delicious. Definitely worth a try

Ingredients Serving: 5

  1. 3/4 cup Bajra flour
  2. 1/4 cup grated Jaggery
  3. 1/4cup yoghurt
  4. 1egg
  5. 2tbsp Olive oil
  6. 1/4tsp Baking powder
  7. 1/2 tsp baking soda
  8. Vanilla extract
  9. 1tsp Cinnamon (optional)

Instructions

  1. Sieve all dry ingredients and keep it aside
  2. Whisk egg and add jaggery, olive oil and yoghurt and blend it well, add vanilla extract and mix it
  3. Add dry ingredients and blend it well to have pouring consistency. Fill the muffin moulds/tray to the half with the batter
  4. preheat the oven to 180 degrees, bake the muffins for 10 -20 mins depending on oven temperature, time may vary. When inserted in centre, toothpick should come out clean.
  5. Decorate it or serve it plain ...Warm or cool, the muffins are really delicious in taste...In case you do not like the taste of jaggery in muffin, you can always replace it with powder sugar...
