Colocasia leaves fritters is a traditional recipe popularly known by Arbi kay patton kay pakoday. I remember my grandfather and aunt making them when i was a small kid and how patiently i used to observe them. Bringing this recipe on this platform is my humble tribute to them of what i have learnt as far as cooking goes is all from them.

Ingredients Serving: 2

  1. Colocasia leaves / Arbi kay pattay 6
  2. Gram flour / Besan 1 cup
  3. Salt to taste
  4. Red chilli coarse powder 1/2 teaspoon
  5. Ajwain 1/2 teaspoon
  6. Dry mango powder 1/4th teaspoon
  7. Green chillies chopped 1 teaspoon
  8. Oil for Deep frying

Instructions

  1. Take colocasia leaves, wash , clean and pat dry.
  2. Prepare a batter of gram flour with water, mixed with all spices and green chillies.
  3. The batter should not be runny and should be little thick so that it can easily coat the back of the spoon.
  4. Spread the colocasia leaves.
  5. Apply the batter evenly on the smooth part of the leaf.
  6. Roll the leaves like you do for swiss roll. The gram flour batter should be rolled inside. Take a steamer and steam the leaves with the batter for around ten to fifteen mintues. .
  7. The leaves should turn a bit yellow or dark green or soft. Do the tooth pick test. The gram flour would have steamed and you find that the toothpick comes out clean.
  8. After steaming let them cool and in the meanwhile heat the oil for frying.
  9. Cut the rolls into 1 inch pieces. Depending on the size of leaves you will get approximately 2 to 3 dices.
  10. Deep fry the pieces and serve hot with sauce or chutney.
  11. Enjoy the colocasia leaves fritters with a cup of hot tea.
