ABOUT Maguro Akami Roll RECIPE

Maguro is the Japanese term for bluefin tuna, perhaps the best known and most commonly eaten fish in all of sushi dining. Tuna served in restaurants is generally one of two different species, the bluefin tuna, traditionally known as ‘maguro,’ which is usually fairly lean, and the yellowfin tuna, which is a fattier species. Akami is the leaner meat from the sides of the fish.

Ingredients Serving: 2

  1. Spicy Tuna Mix - 50 gms
  2. Cucumber - 1/2
  3. sesame seed - 1/2 tsp
  4. Sushi Rice 100 gms
  5. Noori Sheet - 1
  6. Pickled Ginger - 3/4 tsp
  7. Soy Sauce 4 ml
  8. Wasabi Powder - 1/2 tsp
  9. For the SUSHI RICE:
  10. Sushi Rice - 200 gms
  11. Sushi Vinegar - 50 ml
  12. For the SUSHI VINEGAR:
  13. Rice Vinegar - 600 ml
  14. Sugar - 300 gms
  15. Salt - 100 gms
  16. Konbu - 10 gms
  17. For the SPICY TUNA MIX:
  18. Tuna - 300 gms
  19. Shallot - 25 gms
  20. Scallion - 25 gms
  21. Spicy Mayonnaise - 100 gms

Instructions

  1. For sushi rice - mix sushi vinegar with the cooked sushi rice.
  2. For spicy tuna- mix all the ingredients of spicy tuna mix.
  3. Place noori sheet length wise towards you spread the rice evenly , turn it around place the mixture of tuna evenly length wise
  4. Roll it and serve it with gari and wasabi.
