Three-Pepper Casserole

Ingredients to make Three-Pepper Casserole

  • 1/4 cup Couscous
  • 2 eggs
  • 1 tbsp butter
  • 1/2 Plain yogurt
  • 3 cloves garlic, finely chopped
  • 1/4 Cup Red peppers, deseeded and chopped
  • 1/4 Cup Yellow peppers, deseeded and chopped
  • 1/4 Cup Green peppers, deseeded and chopped
  • 1/2 tsp pepper powder
  • 1/2 tsp mustard powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 cup crushed Red Chillies
  • 30 gms grated reduced-fat cheddar cheese

How to make Three-Pepper Casserole

  1. In a bowl place the couscous and add 1 cup of boiling water and close it for 5 minutes. After 5 mins stir and keep aside.
  2. In a pan heat the butter and onions and garlic. Saute them till turn translucent.
  3. Next add salt, coriander, cumin, mustard powder, crushed chill and saute for another 3 minutes.
  4. Then add the three peppers into the pan and saute for 3 minutes.
  5. Now add couscous into the pan stir into the other ingredients.
  6. Now transfer the Pepper mixture into a casserole and spread it.
  7. On to the top add the grated cheese.
  8. In a bow, whisk the eggs and yoghurt together and pour over the casserole.
  9. Finally sprinkle the pepper powder on to the top and close tightly with aluminium foil.
  10. Bake in a preheated oven of 200 degree Celsius for 20 minutes.
  11. Remove the aluminium foil from the casserole and again bake for another 10 minutes or till the top gets brown.
