ABOUT (Bitter Gourd ) Karela pudding with chocolate & strawberry RECIPE

It's a great challenge to convert this bitter vegetable in a dessert. Here comes my innovation. It's a 3 layered pudding with fusion of cake & custard. Do try it and enjoy.

Ingredients Serving: 4

  1. ingredients for Bottom layer:
  2. Vermicelli. 2tablespoon
  3. Milk. 1 cup
  4. Sugar according to taste
  5. Cardamom powder 1/3 teaspoon
  6. ingredients for middle Layer:
  7. Cocoa powder : 1/2cup
  8. Strawberry pieces : 1tablespoon
  9. Whole wheat flour :1cup
  10. Powdered sugar. : 1/2cup
  11. Baking powder :1teaspoon
  12. Baking soda. 1 pinch
  13. Warm milk : 1/2cup
  14. Oil 1 tablespoon
  15. ingredients for top layer:
  16. (Bitter Gourd) Karela : 100grams
  17. Milk 1 cup
  18. Salt 1 tablespoon
  19. Custard : 1tablespoon
  20. sugar 1 tablespoon
  21. For garnishing :
  22. Mix dry fruits chopped 1 tablespoon
  23. Chopped mix fruit 1 tablespoon
  24. Chocolate wafers

Instructions

  1. Preparation of Bottom layer: Dry roast vermicelli in slow flame till golden.Now add sugar, cardamom & milk. Let it boil. Simmer for 1 minute. Turn off the flame. Let it cool.
  2. After cooling, layer it in pudding glass & chill in the refrigerator for 1 hour.
  3. Preparation of middle layer: Sieve dry ingredients thrice. Now cut & fold dry ingredients in milk & oil. Mix gently.
  4. Grease muffin tray. Pour batter in cavities. Sprinkle strawberry pieces. Bake it at 180 degrees for 10 minutes or till toothpick comes out clean.
  5. Now let muffins cool down. After cooling, crumble 1 muffin and add as the middle layer on chilled vermicelli kheer.
  6. Preparation of top layer: First peel off Karela & grate it. Now mix salt in grated karela and keep aside for an hour. After an hour wash twice & squeeze excess water from grated karela. it will reduce the bitterness of karelas.
  7. Now take a wok & dry roast grated Karela in it. Add 1/2 tablespoon of sugar in it. keep stirring & roast till it becomes dry. Turn off the flame & keep aside to cool.
  8. Take milk in a pan. Mix custard till no lumps. Now boil this milk. Add remaining sugar .
  9. Add roasted Karela in boiling custard. Mix for 1 minute. Turn off the flame. Keep aside to cool. When this mixture cools down. Give top layer in pudding glass & refrigerate for 2 hours.
  10. After chilling garnish it with dry fruits, chocolate wafers & fruits. Serve immediately.
  11. Enjoy this chilled, healthy & refreshing dessert.
