Kozhukattai is a popular South Indian sweet dumpling made from rice flour with the feeling of grated coconut and jaggery but today I made it with the feeling of bitter gourd chips grated coconut and jaggery so is become very nutritious and delicious too

Ingredients Serving: 4

  1. Rice flour 1cup
  2. Clarified ghee 1tsp
  3. Warm water for kneeding as per required
  4. Salt 3 pinch
  5. For stuffing
  6. Washed peeled and sliced bitter gourd 1cup
  7. Gratted gaggery 1 cup
  8. Grated coconut 1 cup
  9. Cardmom powder 1tsp
  10. Raisin 1table spoon
  11. Ghee for frying bitter gourd chips
  12. For garnish
  13. Chopped almonds 1table spoon
  14. Greated jaggery 1 table spoon

Instructions

  1. Sieve the flour in a large bowl.
  2. Add ghee and salt to the water and boil it.
  3. Pour this water into the rice flour and kneed well to make a smooth dough
  4. Cover it and Keep aside for 10 min ..
  5. Now take a wok and add ghee in it and add heat the ghee on high heat
  6. Now fry all bitter gourd chips golden brown in small batches .
  7. Drain out them onto kitchen towel to absorb extra ghee.
  8. Now take another wok add a tsp ghee heat it
  9. Now add grated coconut and cardamom powder and roast it for some minute .
  10. Now add grated gaggery in it .
  11. Now add crushed bittergourd and rasins in the jaggery and coconut mixture . Mix well keep stirring .
  12. Switch off the flame and transfer it in a bowl .let it be cool.
  13. Now take the rice dough and make lemon size ball from it
  14. Apply some oil on your palm now take a rice ball flatten it on the palm .
  15. Add a spoonful of bitter gourd gaggery mixture on the flatten ball
  16. Secure all the sides and roll lightly.
  17. Prepare all balls like this only .
  18. Steam all rice balls khozukottai in idli maker till done .
  19. Serve warm like this only or cut these balls in two parts and garnishing with grated gaggery and chopped almonds.
