ABOUT Cauliflower Bhurji RECIPE

Bored of eating same paneer bhurji, so can try this new variation of bhurji made out of cauliflower. Absolutely yummy and easy to cook.

Ingredients Serving: 5

  1. 500 grams cauliflower
  2. 1 cup green peas
  3. 2 onion finely chopped
  4. 3 tomatoes
  5. 2 green chillies
  6. 2 tablespoons fresh cream or malai
  7. 1 teaspoon ginger garlic paste
  8. 1 bay leaf (Tej patta)
  9. 1 small stick of cinnamon (Dalchinni)
  10. 1 teaspoon cumin seeds ( zeera)
  11. 1/2 teaspoon red chiily powder
  12. 1 teaspoon coriander powder
  13. 1 teaspoon cumin powder (zeera powder
  14. 1 teaspoon garam masala powder
  15. 1 teaspoon amchur powder / dry mango powder
  16. 1/2 teaspoon turmeric powder
  17. Pinch of asafoetida (Hing)
  18. 1 teaspoon kasoori methi
  19. 4 tablespoons oil
  20. Fresh coriander leaves
  21. Salt to taste

Instructions

  1. First grate the cauliflower with grater or food processor.
  2. Now blanch the tomatoes and then remove its skin and make a puree of it and then strain it.
  3. Heat oil in a pan; add cumin, bay leaf, cinnamon and hing.
  4. Now add ginger-garlic paste and chopped green chilli and saute for a minute.
  5. Then add the onions and saute till translucent.
  6. Add the cauliflower and green peas and saute for a minute, cover and cook on low heat for 10 minutes.
  7. Now add all the dry masalas and salt, stir for 2 minutes.
  8. Add the tomato puree, stir and cook covered for 5 minutes.
  9. Add the cream and saute for 2 minutes.
  10. Add kasoori methi and garinsh with fresh coriander leaves.
