this is an authentic oriya curry, where okras cooked in mustard and tomato gravy, besara is genre of oriya curry where mustard pastr is the main ingrediant, the term khatta means sour, tomatoes in the gravy impart the required sourness.

Ingredients Serving: 4

  1. 250 grams fresh okras
  2. 1 tomato
  3. 2 tbsps curd whisked
  4. 2 tsps mustard seeds
  5. 2 green chillies
  6. 4-5 garlic flakes
  7. 1/2 tsp paanch phutana (mix of cumin, mustard, aniseed, fenugreek seeds, nigella seeds)
  8. 3-4 curry leaves
  9. 1 tbsp coriander leaves chopped
  10. 2 tbsps mustard oil
  11. 1 cup water
  12. 1/2 tsp turmeric powder
  13. salt to taste

Instructions

  1. half crush the mustard seeds, green chillies ans garlic with little water
  2. then add tomato in the mixer and make a paste
  3. cut the okras into 1 inch pieces
  4. heat 1 tbsp oil in a pan and half cook the okra and keep it aside
  5. heat 1 tbsp oil in the same pan and add the paanch phutana and curry leaves
  6. when it starts spluttering, add the paste and turmeric powder
  7. cook the paste for 5 minutes on medium flame
  8. then add salt, okras, water and cook the okras in the gravy till fully cooked
  9. then add curd and coriander leaves
  10. cook for 1 minute
  11. switch off the flame and garnish with coriander leaves
  12. serve with steamed rice.
